Chef Fred's Cherry Tomato & Sweet Onion Salad


1 dry pint cherry tomatoes (halved or quartered)

1 medium sized Vidalia or Sweet Maui onion (diced)

2 oz fresh chervil (torn, not chopped)

Vinaigrette Dressing: 

 ¾ cup extra virgin olive oil

 ¼ cup red wine vinegar

 2 tbsp sherry vinegar

 1 tbsp sugar

 1 tsp dried oregano

 Salt and pepper to taste


1.  Combine all ingredients for vinaigrette and let sit for 20 minutes to overnight. The longer it sits, the better it tastes.

2. Mix tomatoes, onion, and chervil. Drizzle with dressing and serve.

TIP: This salad makes a great topper to your favorite greens.  Try with arugula, baby lettuces, boston bibb, or any kind of lighter flavor greens.  Try adding fresh mozzarella or ricotta cheese too!
