Strawberry Soup with Ginger and Mint
Ingredients:
In some countries, strawberries are made into a soup and served as an aphrodisiac. We like this version with added ginger for spice and mint.
8 cups fresh ripe strawberries
2 cups vanilla or strawberry yogurt
1/2 cup orange or apple juice
1-2 tbs sugar or sugar substitute (optional)
1 small piece fresh ginger
fresh mint and almonds for garnish
Instructions:

Peel and mince the ginger.

Hull and half the strawberries. (Save a few berries for each bowl for garnish.)

Add berries, yogurt, orange juice, sugar and ginger to a blender.

Blend until smooth and creamy (no chunks).

Place in refrigerator for at least two hours.

Garnish with fresh mint, berries and almonds.
