Chef Fred's Ham and Sweet Potato Hash

Ingredients:

One of our favorite go to recipes.  Filling and easy to start your day.

3 large sweet potatoes

4 large Idaho/Russet potatoes

1lb ham

Butter

Salt and pepper

Instructions:

  1. Steam or boil Idaho/Russet potatoes until just tender, let cool slightly and peel. Cool completely and dice.
  2. Roast or steam sweet potatoes until just tender, let cool slightly and peel. Cool completely and dice.
  3. Dice ham equal size of potatoes.
  4. In a hot pan add butter, then Idaho/Russet potatoes.
  5. After a few seconds add sweet potatoes.
  6. Add ham when potatoes begin to brown.
  7. Season with salt and pepper.
  8. Hash is finished when desired potato crispness is reached.
  9. Serve plain or with your favorite style eggs.
