Fruit Skewers

Ingredients:

For variety, try whatever fruits are in season or your family's favorites.  Also try using a melon baller to create round shapes for the kabobs.

1 cup plain low-fat yogurt

1 tbs fresh lime juice

1 tbs honey

1 tsp fresh cilantro, chopped

2 cups strawberries

1 1/2 cups cantaloupe, cubed

1 1/2 cups honeydew, cubed

8 metal skewers or bamboo skewers soaked in water

Instructions:

  1. In a small mixing bowl, stir the yogurt, lime juice, honey and cilantro together. Transfer the yogurt mixture to a small serving dish, cover and refrigerate until ready to serve.
  2. Thread the cubes of melon and strawberries onto the skewers. Serve the kabobs with the yogurt dipping sauce.
