Spicy Asian Pickles

Ingredients:

If you're a pickle fan, here's something a little different with a spicy Asian twist.  Quick and simple and perfect for BBQ's or added to stir frys.  Or just as a snack! 

1 large English cucumber

1.5 cups unseasoned rice vinegar

1 tsp sambal oelek or sriracha

1 tsp sugar

1 tsp salt

10 sprigs cilantro

Instructions:

  • Thinly slice the cucumber into 1/3” rounds. Set aside.
  • In a small bowl, combine rice vinegar, sambal olek, sugar and salt. Whisk to combine.
  • In a quart-size glass Mason jar, add the cilantro.
  • Add the cucumber slices to the jar.
  • Pour the rice vinegar mixture over the cucumbers.
  • If the cucumbers are not submerged completely into the mixture, add cold water.
  • Seal the jar and place in the refrigerator.
  • Allow cucumber to marinate at least 12 hours and up to 3 days.  The longer it hangs out, the spicier the pickles will be!
