Pork and Bitter Melon Stir Fry

Ingredients:

Feeling a little sniffly?  Chinese Bitter Melon can help!  Full of antioxidants, vitamins A and C, B vitamins, folate, beta-carotene and lutein, it has been used to help manage diabetes, fight cancer, lower cholesterol, aid in digestive problems and help fight the common cold.  For a less strong flavor, parboil the bitter melon before using in stir frys or other dishes.

2 Chinese Bitter Melons

Ground pork mixture (3 oz ground pork, ½ tsp minced ginger, 1 tsp rice wine, ½ tsp sugar, ¼ tsp salt)

Sauce (2 cloves grated garlic, 3tbs smashed black beans, 3 dried red chilies, 2 tbs fish sauce, 1 tbs rice wine, ½ tsp salt, 1 tbs sugar)

Thickening mix (1/4 cup water mixed with 2 tsp cornstarch)

Instructions:

  1. Half the melons lengthwise and then cut into ¼ inch slices.
  2. Stir fry all ingredients for pork mixture together on medium heat.  Set aside.
  3. Mix sauce ingredients together in a bowl.  
  4. Heat wok over high heat, stir fry oil and bitter melon on high heat for 5-7 minutes.  Add sauce mixture and stir-fry for another minute.
  5. Turn off heat and add thickening mix, stirring rapidly.  Add water if sauce needs to be thinned out.  Let simmer for one minute, add pork mixture to wok and serve after heated through.
