Jackfruit Carnitas
Ingredients:
Unripe, this fruit can be cooked in curries and other savory dishes, in fact it has been compared to the taste and texture of pulled pork (try it with bbq sauce). When ripe, it is sweet to eat raw with a taste similar to fruit gum. It compliments desserts, ice cream and sticky rice. A good source of protein, potassium, calcium and iron, the jackfruit is the largest tree-borne fruit in the world and can grow up to 100 pounds each!
20oz jackfruit (about 2-3 cups)
1 small yellow onion, thinly sliced
1-2 tsp chopped chili peppers of your choice
2 tsp ground cumin
2 tsp chili powder
1 tsp paprika
1 tsp garlic powder
olive oil and salt as needed
Instructions:
- Sauté onion in oil for 4-5 minutes or until slightly caramelized.
- Shred jackfruit, it will easily pull apart into shreds that look like pulled pork. Add jackfruit and spices to pan with onion and cook for another 4-5 minutes or until the fruit is slightly crisped at the edges. Season with salt to taste.
- Serve with your favorite toppings!
