Jicama Slaw with Curry Lime Dressing
Change up your summer side dishes and add crunch to cabbage-based slaws with jicama. In this recipe zesty lime is partnered with flavorful curry powder for a delicious dressing that your guests will love.
2 cups jicama, shredded
1 cup green cabbage, thinly sliced
2 green onions, greens and whites sliced
zest of 1 Wonderful Citrus lime
juice of 1 Wonderful Citrus lime
1 tsp honey
1 tsp curry powder
½ tsp salt
- In a medium bowl, stir together the jicama, cabbage and green onions.
- In a small dish, whisk together the lime zest, lime juice, honey, curry powder and salt. Pour the dressing over the vegetables and toss to coat.
- Refrigerate for 15 to 30 minutes before serving to allow flavors to blend.
Yield: 4 servings
