Winter Melon Tea
Ingredients:
3lbs (about 5 cups) of winter melon flesh1/3 cup rock sugar
1 2/3 cup brown sugar
Instructions:
Mix melon and brown sugar in a large pot and let sit for about an hour, or until some liquid has formed.Add rock sugar and bring to a boil.
Reduce heat to low/medium and let simmer for 2 hours or until the melon is completely transparent.
Remove from heat and strain liquid.
To make tea, add 1 part syrup to 3 parts water and serve hot or cold.
